Panforte Margherita 100 g
Panforte is a Tuscan dessert whose history is lost in the mists of time. The first written testimonies on the use and preparation of this dessert date back to around the year 1000. Its preparation was entrusted to the apothecaries or “pharmacists” and was almost exclusively intended for the clergy and the rich, in consideration of the fact that in addition to the “conceals” of orange, cedar, melon it also contained almonds, drugs and spices which were very expensive for the time. The Margherita panforte, which is part of the tradition of the classic recipe, faithfully reflects all the ancient phases in our production: the product is first cooked in large planetary pans (heated pans that simulate cooking in ancient copper cauldrons placed “per day” on the fire ) and, until the candied fruit is dissolved into a homogeneous amalgam, the toasted almonds are not added (as much as 30% of the product); then it is cooked again in the oven and left to rest for a whole night. Only in this way does the product remain soft, rich in flavors and aromas, just like then.
