Pheasant ragù
Podere Micheli’s Pheasant Ragù is a typical recipe of the peasant tradition in Tuscan cuisine. It has a full-bodied flavour, very particular on the palate due to its strong notes of fine game. In the last century, it was consumed on special occasions in the family, when whoever was in charge of the hunt returned with the “trophy”. The taste of pheasant is more intense than that of chicken, very similar to guinea fowl; the meat is very lean and fragrant, characterized by excellent digestibility.
